Jenny’s Must-Haves
Gochujang: Perfect for making your own kimchi stew or even trying your hand at homemade kimchi; use it in marinades for bulgogi, ssamjang, bibimbap sauce or a spicy dressing for salads. Choose a medium heat, fermented variety for depth of flavour.
Doenjang: A rich fermented soybean paste essential for doenjang-jjigae (soybean paste stew), dipping sauces, and as a savoury base in stews and marinades; it adds umami and a rounded, earthy saltiness.
Ganjang (Korean soy sauce, guk-ganjang or jin-ganjang): The backbone of many Korean dishes — use guk-ganjang for soups and stocks and jin-ganjang for seasoning and dipping sauces; it brightens and balances flavours without overpowering them.
Sesame oil & toasted sesame seeds: Pure toasted sesame oil for finishing dishes (a little goes a long way), and toasted sesame seeds to sprinkle on salads, banchan and noodles for aroma and texture.
Gochukaru (Korean red chilli flakes): Coarser and brighter than many chillies, perfect for making kimchi, tteokbokki, spicy stews and for adding colour and heat to sauces and pickles.

1 kimchi cabbage
100–120g coarse salt
70–80g Korean chilli flakes (gochugaru)
3 tbsp fish sauce
2 tbsp minced garlic
½ tsp grated ginger
1 tbsp sugar

Cut the cabbage into bite-sized pieces.
Sprinkle with salt and leave for 1½–2 hours.

Add spring onion and radish.
Mix the seasoning gently through the cabbage.

DURI Tip
Fresh kimchi is crisp and bright.
As it ferments, the flavour becomes deeper and more sour — perfect for fried rice, stew and pancakes.
